Recipe 1

Mocha Hot Cross Buns



  • 4 cups plain flour
  • 1/4 cup cocoa powder
  • 1/4 cup caster sugar
  • 1 shot of espresso (about 30ml), cooled to room temperature
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 egg, beaten
  • 1/2 cup chocolate chips or chopped chocolate


  • 1/2 cup plain flour
  • 4-5 tablespoons water


  • 1/4 cup caster sugar
  • 2 tablespoons water


  1. In a large mixing bowl, combine the flour, cocoa powder, sugar, ground espresso, cinnamon, nutmeg, salt, and yeast.
  2. In a separate bowl, mix together the warm milk, melted butter, and beaten egg.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring with a wooden spoon until a dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, or until the dough becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Once the dough has risen, punch it down and knead in the chocolate chips or chopped chocolate.
  7. Divide the dough into 12 equal portions and shape each portion into a ball. Place the balls on a greased baking sheet, leaving some space between them.
  8. Cover the buns with a clean kitchen towel and let them rise for another 30-45 minutes, or until they double in size.
  9. Preheat your oven to 375°F (190°C).
  10. In a small bowl, mix together the flour and water to form a thick paste. Transfer the paste to a piping bag or a small plastic bag with a corner snipped off.
  11. Pipe crosses onto the top of each bun.
  12. Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  13. While the buns are baking, prepare the glaze by combining the sugar and water in a small saucepan. Heat over low heat until the sugar dissolves, then simmer for 1-2 minutes.
  14. Remove the buns from the oven and brush them with the glaze while they are still warm.

Recipe 2

Easter egg latte


  • 1 shot of espresso (about 30ml)
  • 1/2 cup milk
  • 1-2 teaspoons chocolate syrup or melted chocolate
  • Whipped cream
  • Mini Easter eggs for garnish


  1. Brew a shot of espresso.
  2. While the espresso is brewing, froth your milk.
  3. Pour the espresso into a serving mug.
  4. Add the chocolate syrup or melted chocolate to the espresso and stir until well combined.
  5. Pour the frothed milk into the mug.
  6. Spoon the milk foam on top of the latte.
  7. Top the latte with whipped cream for extra indulgence.
  8. Garnish with mini Easter eggs on top of the whipped cream.
  9. Serve immediately.

Recipe 3

Easter egg affogato


  • Vanilla ice cream or gelato
  • Mini Easter eggs
  • 1 shot of espresso (about 30ml)


  1. Scoop a generous portion of vanilla ice cream/gelato into a serving glass or bowl.
  2. Place a few mini Easter eggs on top of the ice cream.
  3. Prepare a shot of espresso.
  4. Pour the hot espresso over the ice cream and Easter eggs.
  5. Serve immediately.
